I’ve seen this question asked a few times, but the last one was 2 years ago, so I hope the situation has improved since then 
I would like to have a question in my quiz, where a student has to write something in response. Not just a few words, a paragraph. Is it possible to achieve that with any plugin or something?

This is still currently not possible. The main reason for this is less of a technical one, and more due to the fact that an overall user experience overhaul for the learner and coach is required to accommodate this. As free response questions are generally not automatically graded in the same way all of our existing question types are.
That said - we do have designs for these mostly completed - we hope to have these implemented and released this year or early next.
